Method

Casserole Preparation

    Sauté the Vegetables

    In a large skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, sauté until translucent. Add sliced mushrooms and diced potatoes, cook for about 5-7 minutes.

    Add Broth and Seasoning

    Pour in vegetable broth, add thyme, salt, and pepper. Bring to a simmer and cook for about 15-20 minutes, or until potatoes are tender.

    Add Optional Sausages

    If using, add the sliced sausages to the skillet and cook for an additional 5 minutes.

    Transfer to Oven

    Preheat the oven to 180°C (350°F). Transfer the mixture to a baking dish and bake for 20 minutes.

Poaching Eggs

    Prepare the Water

    Bring a pot of water to a gentle simmer. Add a splash of vinegar to help the egg whites set.

    Poach the Eggs

    Crack each egg into a small bowl, then gently slide it into the simmering water. Poach for about 3-4 minutes until the whites are set but yolks are still runny.

Hollandaise Sauce

    Make the Sauce

    In a bowl, whisk the egg yolks until thick. Gradually add melted butter while continuously whisking. Stir in lemon juice, salt, and cayenne pepper to taste.

Assembly

    Once the casserole is done baking, serve it on a plate, top with poached eggs, and drizzle with hollandaise sauce.
