    Prepare the mussels

    Rinse the mussels under cold water, scrubbing the shells to remove any dirt or sand. Discard any mussels that are open and do not close when tapped.

    Sauté aromatics

    In a large pot, heat the olive oil over medium heat. Add the finely chopped shallots and minced garlic, sautéing until translucent.

    Add mussels and pastis

    Add the prepared mussels to the pot, followed by the pastis. Stir gently to combine and cover the pot with a lid.

    Steam the mussels

    Cook for about 5-7 minutes until the mussels have opened. Discard any mussels that remain closed.

    Finish and serve

    Stir in chopped parsley, season with salt and black pepper to taste, and serve hot.

    Prepare the potatoes

    Peel the potatoes and cut them into thin strips, about 1 cm thick. Rinse under cold water to remove excess starch and dry thoroughly.

    In a large, deep pan, heat the vegetable oil to 180°C (350°F).
