Veal Preparation

    Sear the Veal

    Season the veal striploin with salt and black pepper. In a skillet, heat olive oil over medium-high heat. Sear the veal on both sides until browned, about 3-4 minutes per side. Add butter to the skillet and baste the veal for an additional 2 minutes. Remove from heat and let rest.

Marsala Sauce Preparation

    Make the Sauce

    In the same skillet used for the veal, add minced shallots and garlic, sauté until soft. Pour in Marsala wine and beef broth, scraping up any browned bits from the skillet. Add thyme and let simmer for 10 minutes. Mix cornstarch with water, then stir into the sauce to thicken. Cook for an additional 2 minutes.

House Fries Preparation

    Prepare the Fries

    Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Fry the potato strips in batches until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels. Season with salt to taste.

Assembly

    Serve the Dish

    Slice the rested veal striploin and place on a plate. Spoon the Marsala sauce over the veal and serve with house fries on the side.
