Method

Mousse Preparation

  1. 1

    Soften Gelatin

Soak the gelatin sheets in cold water for about 5 minutes until soft.

  2. 2

    Mix Mascarpone

In a mixing bowl, combine mascarpone cheese, lemon juice, lemon zest, and powdered sugar. Mix until smooth.

  3. 3

    Whip Cream

In another bowl, whip the heavy cream until soft peaks form. Gently fold the whipped cream into the mascarpone mixture.

  4. 4

    Incorporate Gelatin

Heat a small amount of water and dissolve the softened gelatin. Stir it into the mascarpone mixture until well combined.

  5. 5

    Chill

Transfer the mousse to serving glasses and refrigerate for at least 2 hours to set.

Crumble Preparation

  1. 6

    Prepare Crumble

Preheat your oven to 180°C (350°F). In a bowl, mix flour, brown sugar, and chopped almonds. Cut in the butter until the mixture resembles coarse crumbs.

  2. 7

    Bake

Spread the crumble mixture on a baking sheet and bake for about 15-20 minutes until golden brown. Allow to cool.

Coconut Sherbet Preparation

  1. 8

    Mix Ingredients

In a bowl, whisk together coconut milk, sugar, lime juice, and a pinch of salt until the sugar is dissolved.

  2. 9

    Chill

Pour the mixture into an ice cream maker and churn according to the manufacturer's instructions. Alternatively, pour into a shallow dish and freeze, stirring every 30 minutes until firm.
