Making the Lemon Beurre Blanc

Prepare the Sauce Base
In a saucepan, combine white wine and chopped shallots. Bring to a boil and reduce until about 2 tablespoons of liquid remain.

Lower the heat and whisk in the heavy cream. Gradually add the cold butter, whisking continuously until the sauce is smooth. Stir in lemon juice, and season with salt and pepper to taste.
Preparing the Potato Purée

Cook the Potatoes
Peel and cut the potatoes into uniform pieces. Boil in salted water until tender, about 15-20 minutes. Drain well.
