Method

Preparing the Potato Puree

    Cook the Potatoes

    Peel and chop the potatoes into evenly sized pieces. Boil them in salted water until fork-tender, about 15-20 minutes.

    Make the Puree

    Drain the potatoes and return them to the pot. Add butter, heavy cream, salt, and black pepper. Mash until smooth and creamy. Set aside.

Making the Lemon Beurre Blanc

    Sauté Shallots

    In a saucepan, melt a small amount of butter over medium heat. Add shallots and sauté until translucent.

    Prepare Sauce

    Add white wine and lemon juice to the shallots. Bring to a simmer and reduce until about 1/3 of the liquid remains. Reduce heat to low and whisk in the butter until smooth. Season with salt.

Grilling the Salmon

    Prepare the Grill

    Preheat your grill to medium-high heat. Brush the grill grates with olive oil.

    Grill the Salmon

    Rub the salmon fillets with olive oil, salt, and black pepper. Place skin-side down on the grill. Cook for about 5-6 minutes per side, or until the salmon is cooked through and flakes easily.

Serving

    Plate the Dish

    On a plate, serve a generous scoop of potato puree, place the grilled salmon on top, and drizzle with lemon beurre blanc sauce.
