Grilled Rack of Lamb

    Prepare the Lamb

    Preheat your grill to medium-high heat. In a bowl, mix olive oil, minced garlic, chopped rosemary, salt, and black pepper. Rub this mixture all over the rack of lamb.

    Grill the Lamb

    Place the rack of lamb on the grill and cook for about 15-20 minutes, turning occasionally, until the internal temperature reaches 135°F for medium-rare. Remove from the grill and let it rest.

Rosemary Sauce

    In a saucepan, combine red wine and beef stock. Bring to a boil and reduce to a simmer. Add fresh rosemary and let it reduce until thickened. Stir in butter until melted and smooth.

Aligot Purée
