Gnocchi Preparation

Cook the Potatoes
Boil the potatoes in salted water until tender. Drain and let them cool slightly before peeling.

Make the Dough
Mash the potatoes in a large bowl. Mix in the flour, egg, and salt until a dough forms. Knead gently until smooth.

Shape the Gnocchi
Divide the dough into smaller pieces. Roll each piece into a rope and cut into small pieces. Optionally, shape them with a fork.

Cook the Gnocchi
Bring a pot of salted water to a boil. Drop the gnocchi into the water and cook until they float. Remove with a slotted spoon.

Add Broth
Gradually whisk in the vegetable broth. Bring to a simmer and cook until thickened.

Stir in the heavy cream and parmesan cheese. Season with salt and black pepper to taste.

Prepare the Vegetables
If using fresh artichokes, steam or boil them until tender. Blanch the broccoli florets in boiling water for 2-3 minutes.

Combine and Serve
In a serving bowl, add the gnocchi, artichokes, and broccoli. Pour the parmesan velouté over the top and serve immediately.
