Cooking Instructions

  1. 1

    Caramelize the Onions

In a large pot, melt the butter and olive oil over medium heat. Add the sliced onions and a pinch of salt. Cook, stirring frequently, for about 30-40 minutes until the onions are caramelized and golden brown.

  2. 2

    Add Garlic

Add the minced garlic to the pot and cook for another 2 minutes until fragrant.

  3. 3

    Deglaze the Pot

Pour in the white wine and scrape the bottom of the pot to deglaze. Let it simmer for about 5 minutes until reduced slightly.

  4. 4

    Add Broth and Herbs

Add the beef broth, thyme, bay leaves, salt, and pepper. Bring to a boil, then reduce heat to low and let it simmer for 30 minutes.

  5. 5

    Prepare the Bread

While the soup simmers, preheat the oven to 350°F (175°C). Place the baguette slices on a baking sheet and toast them in the oven until golden brown, about 10 minutes.

  6. 6

    Serve the Soup

Remove the bay leaves from the soup and ladle it into bowls. Top each bowl with toasted baguette slices and sprinkle generously with Gruyère cheese.

  7. 7

    Melt the Cheese

Place the bowls under the broiler for 2-3 minutes until the cheese is melted and bubbly. Serve hot.
