Preparation of the Custard

    Step 1: Preheat Oven

    Preheat the oven to 325°F (160°C).

    Step 2: Infuse Cream

    In a saucepan, combine the heavy cream and split vanilla bean (scrape the seeds into the cream and add the pod). Heat over medium heat until it just begins to simmer. Remove from heat and let it steep for about 15 minutes.

    Step 3: Whisk Egg Yolks

    In a mixing bowl, whisk together the egg yolks, granulated sugar, and a pinch of salt until well combined and slightly pale.

    Step 4: Combine Mixtures

    Slowly pour the warm cream mixture into the egg yolk mixture while continuously whisking to temper the yolks. Remove the vanilla bean pod.

    Strain the mixture through a fine-mesh sieve into a large measuring cup or bowl to remove any cooked egg bits.

    Place ramekins in a baking dish and fill each ramekin with the custard mixture, leaving a little space at the top.

    Fill the baking dish with hot water until it reaches halfway up the sides of the ramekins. Bake for 30-35 minutes, or until the custard is set but still slightly jiggly in the center.

Caramelizing the Sugar
