Veal Preparation

    Sear the Veal

    Heat olive oil in a skillet over medium-high heat. Season the veal with salt and pepper, then sear each side for 3-4 minutes until browned. Remove and set aside.

    In the same skillet, add butter and chopped shallots. Sauté until shallots are translucent. Pour in Marsala wine and add thyme. Allow it to simmer for 5-7 minutes until reduced by half.

    Return the veal to the skillet, coating it with the sauce. Cook for an additional 3-5 minutes until the veal reaches your desired doneness. Adjust seasoning with salt and pepper.

Frites Preparation

    Prepare the Potatoes

    Peel and cut the potatoes into thin strips. Soak them in cold water for 30 minutes to remove excess starch.

    Fry the Potatoes

    Heat vegetable oil in a deep fryer or large pot to 180°C (350°F). Drain and dry the potatoes, then fry in batches until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels, seasoning with salt.
