Method

Chocolate Crémeux

  1. 1

    Melt the Chocolate

Chop the dark chocolate into small pieces and place in a heatproof bowl. Heat the heavy cream in a saucepan until it just begins to simmer. Pour the hot cream over the chocolate and let it sit for a minute before stirring until smooth.

  2. 2

    Prepare the Egg Mixture

In a separate bowl, whisk together the egg yolks, sugar, and vanilla extract until pale and fluffy.

  3. 3

    Combine and Cook

Slowly pour the melted chocolate into the egg mixture while whisking. Return the mixture to the saucepan and cook over low heat, stirring constantly until it thickens enough to coat the back of a spoon. Do not let it boil.

  4. 4

    Chill

Pour the chocolate crémeux into serving dishes and refrigerate for at least 2 hours or until set.

Stracciatella Ice Cream

  1. 5

    Mix Ingredients

In a large bowl, combine the heavy cream, sweetened condensed milk, and vanilla extract. Whisk until well blended.

  2. 6

    Add Chocolate

Fold in the finely chopped dark chocolate.

  3. 7

    Freeze

Transfer the mixture to an airtight container and freeze for at least 4 hours or until solid.

Caramel Sauce

  1. 8

    Make the Caramel

In a saucepan, heat the sugar over medium heat until it melts and turns a deep amber color. Do not stir, just swirl the pan occasionally.

  2. 9

    Add Cream and Butter

Once the sugar is melted, carefully add the heavy cream (it will bubble vigorously) and stir until combined. Remove from heat and stir in the butter and sea salt.

  3. 10

    Cool

Allow the caramel sauce to cool slightly before using.

Chocolate Sauce

  1. 11

    Melt the Chocolate

In a small saucepan, melt the dark chocolate with the heavy cream over low heat, stirring until smooth.

  2. 12

    Serve

Remove from heat and let cool slightly before drizzling over the dessert.
