    Prepare the Casserole

    In a large skillet, heat olive oil over medium heat. Add the sliced mushrooms and small onions, and sauté until they are soft and slightly caramelized, about 5-7 minutes.

    Stir in the cooked and sliced sausages, garlic, salt, and pepper. Cook for an additional 3-5 minutes, until heated through.

    Transfer to Baking Dish

    Transfer the mixture to a baking dish and sprinkle with chopped parsley. Set aside while preparing the hollandaise sauce.

    Make the Hollandaise Sauce

    In a heatproof bowl, whisk together the egg yolks and lemon juice. Place the bowl over a pot of simmering water (double boiler) and continue to whisk until the mixture thickens and doubles in volume.

    Incorporate Butter

    Slowly drizzle in the melted butter while whisking continuously until the sauce is thick and creamy. Season with a pinch of salt.

    Poach the Eggs

    In a saucepan, bring water to a gentle simmer and add vinegar. Crack each egg into a small bowl, then gently slide it into the simmering water. Poach for about 3-4 minutes or until the whites are set but the yolks are still runny.
