Method

Cooking the Lamb

    Marinate the lamb

    In a bowl, combine olive oil, minced garlic, chopped rosemary, salt, and black pepper. Rub this mixture all over the rack of lamb and let it marinate for at least 30 minutes.

    Grill the lamb

    Preheat the grill to medium-high heat. Grill the marinated rack of lamb for about 4-5 minutes on each side for medium-rare, or until desired doneness. Let it rest for 10 minutes before slicing.

Preparing the Aligot

    Cook the potatoes

    Boil the cubed potatoes in salted water until fork-tender, about 15-20 minutes. Drain and return to the pot.

    Make the purée

    Add heavy cream, butter, and minced garlic to the potatoes. Mash until smooth. Stir in the grated Gruyère cheese until melted and creamy.

Sautéing the Rapinis and Mushrooms

    Sauté vegetables

    In a skillet, heat olive oil over medium heat. Add sliced mushrooms and sauté for 3-4 minutes until browned. Add the rapini, salt, and black pepper, and cook for another 5 minutes until tender.
