Slice the onions and apples into thin wedges. Pat the calf's liver dry with paper towels and season both sides with salt and black pepper.

In a large skillet, heat the butter and olive oil over medium heat. Add the sliced onions and cook, stirring frequently, until they are golden brown and caramelized, about 15-20 minutes. Remove the onions from the skillet and set aside.

In the same skillet, add the apple wedges and cook for about 5 minutes, until they start to soften. Add the apple cider vinegar, and cook for an additional 2-3 minutes. Remove from the heat and set aside.

Increase the heat to medium-high. In the same skillet, add a bit more oil if needed, and then add the calf's liver slices. Cook for about 3-4 minutes on each side, or until browned and cooked to your desired doneness. Avoid overcooking.
