    Caramelize the Onions

    In a large skillet, heat 2 tablespoons of butter and 1 tablespoon of olive oil over medium heat. Add the sliced onions, salt, and cook slowly until they are golden brown and caramelized, about 15-20 minutes. Stir occasionally to prevent burning.

    Prepare the Apple and Sauce

    While the onions are caramelizing, peel and slice the apple. In a small saucepan, melt 2 tablespoons of butter and add the apple slices. Sauté them until they are soft, about 5 minutes. Stir in the Dijon mustard and a splash of water to create a sauce. Cook for an additional 2 minutes and set aside.

    Cook the Liver

    Season the calf's liver with salt and black pepper. In the same skillet used for the onions, add 1 tablespoon of olive oil over medium-high heat. Once hot, add the liver slices and cook for about 3-4 minutes on each side, or until browned and cooked to your liking.

    Plate the Dish

    On a serving plate, place the cooked calf's liver and top it with the caramelized onions and apple mustard sauce. Serve immediately.
