Braised Beef Cheek

    Sear the Beef

    In a large Dutch oven, heat the olive oil over medium-high heat. Season the beef cheeks with salt and black pepper, then sear them in the hot oil until browned on all sides. Remove from the pot and set aside.

    Sauté Vegetables

    In the same pot, add onions, carrots, and celery. Sauté until softened, about 5-7 minutes. Add garlic and sauté for an additional minute.

    Deglaze and Braise

    Pour in the red wine, scraping up any browned bits from the bottom of the pot. Bring to a simmer and reduce by half. Add the beef broth, bay leaves, thyme, and return the beef cheeks to the pot. Cover and simmer on low for 3-4 hours until tender.

Mashed Potatoes

    Cook Potatoes

    In a large pot, cover the cubed potatoes with cold water and add a pinch of salt. Bring to a boil and cook until tender, about 15-20 minutes.

    Mash Potatoes

    Drain the potatoes and return to the pot. Add butter, heavy cream, salt, and black pepper. Mash until smooth and creamy.

Green Beans and Bacon

    Cook Bacon

    In a skillet, cook the chopped bacon over medium heat until crispy. Remove and drain on paper towels.

    Sauté Green Beans

    In the same skillet, add the green beans and sauté in the bacon fat until tender, about 5-7 minutes. Season with salt and black pepper.
