Braised Beef Cheeks

    Prepare the Beef Cheeks

    Season the beef cheeks with salt and black pepper. Heat olive oil in a large Dutch oven over medium-high heat. Sear the beef cheeks on all sides until browned. Remove and set aside.

    Sauté Vegetables

    In the same pot, add chopped onion, sliced carrots, and minced garlic. Sauté until softened, about 5 minutes.

    Deglaze the Pot

    Pour in the red wine and scrape up any browned bits from the bottom of the pot. Let it simmer for 5 minutes.

    Add Remaining Ingredients

    Return the beef cheeks to the pot. Add beef broth, thyme, and bay leaves. Bring to a simmer, cover, and reduce heat to low. Braise for 2-3 hours until the meat is tender.

Mashed Potatoes

    Cook Potatoes

    Peel and chop potatoes into chunks. Boil in salted water until tender, about 15-20 minutes. Drain.

    Mash Potatoes

    In a bowl, mash the potatoes with butter and milk until smooth. Season with salt to taste.

Green Beans and Bacon

    Cook Bacon

    In a skillet, cook the bacon until crispy. Remove and chop into pieces.

    Sauté Green Beans

    In the same skillet, add olive oil and green beans. Sauté for about 5-7 minutes until tender. Stir in the bacon and season with salt to taste.
