Cooking Instructions

  1. 1

    Marinate the Chicken and Lamb

In a bowl, mix yogurt, lemon juice, garlic, ginger, and spices. Add chicken and lamb, ensuring they are well coated. Let marinate for at least 30 minutes.

  2. 2

    Prepare the Fish

Season fish fillets with salt, pepper, and a squeeze of lemon juice. Set aside.

  3. 3

    Cook the Rice

Rinse basmati rice under cold water until the water runs clear. In a pot, combine rice and 4 cups of water. Bring to a boil, reduce heat, cover, and simmer for 15-20 minutes or until water is absorbed and rice is fluffy.

  4. 4

    Cook the Chicken Tikka

Preheat a grill or skillet over medium-high heat. Cook marinated chicken pieces for about 5-7 minutes on each side until fully cooked. Remove and keep warm.

  5. 5

    Cook the Lamb Sekuwa

In the same grill or skillet, cook marinated lamb pieces for about 8-10 minutes until cooked through and slightly charred. Remove and keep warm.

  6. 6

    Cook the Fish

In a non-stick skillet, heat oil over medium heat. Cook the fish fillets for about 3-4 minutes on each side until golden and cooked through. Remove and keep warm.

  7. 7

    Cook the Shrimp

In the same skillet, add a little more oil if needed, and sauté shrimp for about 2-3 minutes or until they turn pink and opaque. Remove and keep warm.

  8. 8

    Assemble the Platter

On a large serving platter, arrange the chicken tikka, fish, lamb sekuwa, and shrimp alongside a generous serving of basmati rice. Garnish with fresh cilantro and lemon wedges if desired.
