Prepare the patty

If patties are not pre-formed, divide 6–8 oz (170–225 g) of ground beef into a single patty per serving and form gently into a 3/4"–1" thick round. Avoid overworking the meat. Make a slight dimple in the center with your thumb to reduce puffing during cooking.

Season

Season both sides of the patty evenly with the salt and black pepper just before cooking.

Toast the bun

Heat a skillet or griddle over medium heat. Spread the softened butter (or brush oil) on the cut sides of the bun. Place buns cut-side down on the hot skillet and toast until golden and lightly crisp, about 1–2 minutes. Remove and set aside.

Cook the patty

Increase heat to medium-high and add the oil to the skillet. When oil shimmers, add the patty. Cook times will vary by thickness and desired doneness: about 3 minutes per side for medium-rare (internal temp 125–130°F / 52–55°C), 4 minutes per side for medium (135°F / 57°C), or 5 minutes per side for medium-well (145°F / 63°C). Flip once. If you want cheese, add a slice in the last 30–60 seconds and cover to melt.

Rest the patty

Transfer the cooked patty to a plate and let it rest 2–3 minutes to redistribute juices.

Assemble the burger

Place the toasted bottom bun on a plate. Lay the lettuce leaf on the bun, set the rested patty on top, then add tomato slices, onion rings, and pickle slices. Top with the toasted bun. Serve immediately.
