Duxelles

Garnish (optional)

Method

Prepare the Duxelles

  1. 1

    Sauté the Vegetables

In a skillet, melt the unsalted butter over medium heat. Add the finely chopped shallots and minced garlic, and sauté until translucent (about 3-4 minutes).

  2. 2

    Cook the Mushrooms

Add the finely chopped mushrooms to the skillet. Cook, stirring frequently, until the mushrooms release their moisture and become dry (about 8-10 minutes).

  3. 3

    Finish the Duxelles

Stir in the heavy cream, salt, and black pepper. Cook for an additional 2-3 minutes until well combined. Remove from heat and let cool.

Cook the Quail Eggs

  1. 4

    Boil the Eggs

Bring a pot of water to a gentle boil. Carefully add the quail eggs and boil for 3-4 minutes.

  2. 5

    Cool and Peel

Remove the eggs from the boiling water and place them in an ice bath to cool. Once cooled, gently peel the shells from the quail eggs.

Assemble the Dish

  1. 6

    Plate the Duxelles

On a serving plate, spoon a generous amount of the mushroom duxelles. Halve the peeled quail eggs and arrange them on top of the duxelles.

  2. 7

    Garnish

Sprinkle with chopped chives and season with salt and black pepper to taste. Serve immediately.
