Cheesecake Preparation

Preheat the Oven

Preheat your oven to 200°C (400°F). Line a 9-inch springform pan with parchment paper and grease the sides.

Mix the Cheesecake Batter

In a large mixing bowl, beat the cream cheese and sugar until smooth. Add the eggs one at a time, mixing well after each addition. Stir in the heavy cream, vanilla extract, flour, and salt until fully combined.

Bake the Cheesecake

Pour the batter into the prepared pan and bake for 40-45 minutes or until the top is deeply golden and the center is slightly jiggly. Turn off the oven and leave the cheesecake inside for 1 hour.

Cool and Chill

Remove the cheesecake from the oven and let it cool at room temperature. Once cooled, refrigerate for at least 4 hours or overnight.

Fruit Topping Preparation

Prepare the Fruit

In a medium bowl, toss the seasonal fruit with sugar and lemon juice. Let it sit for about 15-20 minutes to macerate.

Slice the chilled cheesecake and top each slice with the macerated seasonal fruit before serving.
