Pasta Preparation

Boil the Pasta
In a large pot, bring salted water to a boil. Add the penne pasta and cook according to package instructions until al dente (usually around 10-12 minutes).

Drain the Pasta
Once cooked, drain the pasta in a colander and set aside. Reserve a cup of pasta water for later use.

Chop the Vegetables
While the pasta is cooking, chop the bell pepper and zucchini into bite-sized pieces. Halve the cherry tomatoes and mince the garlic.

Sauté the Vegetables
In a large skillet, heat the olive oil over medium heat. Add the garlic and sauté for about 1 minute until fragrant. Then, add the bell pepper and zucchini, cooking for another 3-4 minutes.

Add Spinach and Tomatoes
Add the cherry tomatoes and spinach to the skillet. Cook for an additional 3-5 minutes, stirring occasionally, until the spinach is wilted and the tomatoes are slightly softened.
Combining Ingredients

Combine Pasta and Vegetables
Add the drained penne pasta to the skillet with the sautéed vegetables. Toss everything together gently.

Season the Dish
Season the pasta with salt and black pepper. If needed, add reserved pasta water a little at a time to help loosen the mixture.

Serve the vegetarian pasta hot, garnished with grated Parmesan cheese if desired.
