Method
Preparation
- 1
Prepare the Prawn Mixture
In a food processor, add the prawn meat and blend until it forms a smooth paste.
- 2
Combine Ingredients
In a mixing bowl, combine the prawn paste with tapioca flour, salt, white pepper, and water. Mix well until a dough forms.
- 3
Shape the Mixture
Transfer the dough onto a clean surface and knead it for a few minutes until it is smooth. Then, roll it out into a long log shape, about 1-inch in diameter.
- 4
Wrap and Chill
Wrap the log tightly in plastic wrap and refrigerate for at least 1 hour, or until firm.
Frying
- 5
Slice the Dough
Once the dough is firm, remove it from the refrigerator and carefully unwrap it. Slice the log into thin discs, about 2-3mm thick.
- 6
Heat the Oil
In a deep frying pan or wok, heat the vegetable oil over medium heat until it reaches 180°C (350°F). You can test the oil by dropping in a small piece of dough; it should sizzle immediately.
- 7
Fry the Crackers
Fry the sliced dough pieces in batches, making sure not to overcrowd the pan. Fry for about 1-2 minutes or until they puff up and turn golden brown.
- 8
Drain and Cool
Using a slotted spoon, remove the fried crackers and place them on paper towels to drain excess oil. Allow them to cool completely.
