Preparation of Chicken

Marinate the Chicken
In a bowl, combine 2 tablespoons of olive oil, 1 teaspoon of garlic powder, 1 teaspoon of salt, and 1 teaspoon of black pepper. Add the chicken breasts and coat them well with the marinade. Let it sit for at least 15 minutes.

Grill the Chicken
Preheat your grill to medium-high heat. Once hot, place the marinated chicken breasts on the grill. Cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C). Remove from the grill and let it rest for 5 minutes before slicing.

Prepare the Salad Base
In a large salad bowl, place 4 cups of mixed greens. Halve the cherry tomatoes and add them to the bowl.

Add Sliced Chicken
Once the grilled chicken has rested, slice it into strips and add it to the mixed greens and tomatoes.
Vinaigrette Preparation

Make the Dressing
In a small bowl, whisk together 3 tablespoons of olive oil, 2 tablespoons of balsamic vinegar, 1 teaspoon of Dijon mustard, and 1 teaspoon of honey. Season with salt and black pepper to taste.

Dress the Salad
Drizzle the vinaigrette over the salad just before serving and toss gently to combine.
