Method

Preparing the Chips

    Peel and Cut Potatoes

    Peel the potatoes and cut them into thick fries, about 1/2 inch wide.

    Soak in Water

    Place the cut potatoes in a bowl of cold water for at least 30 minutes. This helps to remove excess starch and makes for crispier fries.

    Preheat Oil

    In a deep fryer or large pot, heat the vegetable oil to 350°F (175°C).

    Fry the Chips (First Fry)

    Drain the potatoes and pat them dry with paper towels. Fry the chips in batches for about 4-5 minutes until they are soft but not browned. Remove and drain on paper towels.

    Fry the Chips (Second Fry)

    Increase the oil temperature to 375°F (190°C). Fry the chips again in batches for an additional 2-3 minutes until golden and crispy. Remove and season with salt to taste.

Preparing the Fish

    Make the Batter

    In a mixing bowl, combine the flour, baking powder, salt, and black pepper. Gradually whisk in the cold water until the batter is smooth and slightly thick.

    Coat the Fish

    Dip each cod fillet into the batter, ensuring it is fully coated.

    Fry the Fish

    Carefully place the battered fish fillets in the hot oil. Fry for about 4-5 minutes on each side until golden brown and cooked through. Remove and drain on paper towels.

Preparing the Mushy Peas

    Cook the Peas

    In a small pot, bring water to a boil and add the frozen peas. Cook for about 3-4 minutes until tender.

    Mash the Peas

    Drain the peas and return them to the pot. Add butter, salt, and pepper to taste. Mash the peas with a fork or potato masher until desired consistency is reached. Optionally, stir in fresh mint for added flavor.
