Preheat the Oven
Preheat your oven to 425°F (220°C) to ensure it reaches the desired temperature by the time you are ready to bake the cakes.

Prepare Ramekins
Grease four ramekins with 1 tablespoon of unsalted butter and dust them with 1 tablespoon of cocoa powder. This will help the cakes release easily after baking.
Making the Batter

Melt Chocolate and Butter
In a microwave-safe bowl, combine 170g of dark chocolate and 115g of unsalted butter. Microwave in 30-second intervals, stirring in between, until fully melted and smooth.

Mix Sugar and Eggs
In a separate bowl, whisk together 100g of granulated sugar, 2 large eggs, 1 egg yolk, and 1 teaspoon of vanilla extract until the mixture is pale and slightly thickened.

Combine Mixtures
Slowly pour the melted chocolate mixture into the egg mixture, stirring continuously to combine. Be careful not to cook the eggs.

Add Flour and Salt
Sift in 50g of all-purpose flour and add a pinch of salt. Gently fold the mixture until just combined.

Fill Ramekins
Divide the batter evenly among the prepared ramekins, filling each about 3/4 full to allow for rising.

Bake
Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes. The edges should be firm, but the center will be soft and slightly jiggly.

Cool and Serve
Remove from the oven and let the cakes sit for 1 minute. Carefully invert each ramekin onto a plate and let it sit for a few seconds before lifting. Serve immediately, optionally with vanilla ice cream.
