Calamari Preparation

Prepare the Squid
Rinse the calamari under cold water and pat dry with paper towels. Cut the squid into rings if not already done.

Make the Battering Mixture
In a large bowl, combine the all-purpose flour, cornstarch, salt, black pepper, paprika, and baking powder. Mix well. Gradually add cold water to create a batter that is smooth but not too thick.

Heat the Oil
In a deep frying pan or pot, heat vegetable oil over medium-high heat until it reaches 180°C (350°F).

Coat the Calamari
Dip each calamari ring into the batter, allowing excess to drip off.

Fry the Calamari
Carefully place the battered calamari into the hot oil in batches, ensuring not to overcrowd the pan. Fry for about 2-3 minutes or until golden brown and crispy. Remove and drain on paper towels.
Aioli Preparation

Combine Ingredients
In a bowl, mix together the mayonnaise, minced garlic, lemon juice, olive oil, salt, and black pepper until well combined.

Serve
Transfer the aioli to a small serving bowl and serve alongside the crispy calamari.
