Marinade

Swordfish

Method

Marinade Preparation

  1. 1

    Mix the Marinade

In a medium bowl, whisk together the olive oil, lemon juice, minced garlic, chopped parsley, salt, black pepper, and paprika until well combined.

  2. 2

    Marinate the Swordfish

Place the swordfish steaks in a shallow dish or a resealable plastic bag. Pour the marinade over the swordfish, ensuring each piece is well coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes, allowing the flavors to infuse.

Cooking

  1. 3

    Prepare the Grill

Preheat your wood-fired grill to medium-high heat. Ensure that the wood is burning steadily and producing a good amount of heat and smoke.

  2. 4

    Grill the Swordfish

Remove the swordfish from the marinade, allowing excess marinade to drip off. Place the swordfish steaks on the grill and cook for about 4-5 minutes on each side, or until the fish flakes easily with a fork and has nice grill marks.

  3. 5

    Serve

Once cooked, remove the swordfish from the grill and let it rest for a couple of minutes. Serve with lemon wedges and a sprinkle of fresh parsley for garnish.
