Preparation of Ingredients

    Prepare the Kale

    Wash the kale leaves thoroughly, remove the stems, and tear the leaves into bite-sized pieces. Set aside in a large mixing bowl.

    Crispy Chickpeas

    Rinse and drain canned chickpeas. Pat dry and toss with olive oil, salt, and pepper. Roast in a preheated oven at 400°F (200°C) for 25-30 minutes until crispy, stirring once halfway through.

    Pickled Garlic Scapes

    Prepare pickled garlic scapes by combining vinegar, water, sugar, and salt in a pot. Bring to a boil and pour over cleaned garlic scapes in a jar. Let it cool and refrigerate for at least 24 hours.

    Wood-Fired Broccoli

    Toss broccoli florets with olive oil, salt, and pepper. Roast in a wood-fired oven or grill until tender and slightly charred, about 10-15 minutes. Set aside.

    Housemade Sausage

    Cook the housemade sausage links on a grill or skillet over medium heat until browned and cooked through, about 10-12 minutes. Slice into rounds.

    Combine Salad Ingredients

    In the bowl with kale, add the crispy chickpeas, pickled garlic scapes, and wood-fired broccoli. Toss gently to combine.

    Add Toppings

    Top the salad mixture with sliced housemade sausage, dollops of ricotta, and sprinkle with rye breadcrumbs.

    Dress the Salad

    Drizzle the pepper-parmigiano dressing and mint pesto over the assembled salad. Toss lightly to coat all ingredients evenly.
