Cooking Pasta

    Boil the Pasta

    In a large pot, bring water to a boil and add 1 tablespoon of salt. Once boiling, add the orecchiette pasta and cook according to package instructions until al dente, usually about 8-10 minutes.

    Reserve Pasta Water

    Before draining the pasta, reserve about 1 cup of the pasta cooking water. Set aside for later use.

    Drain the Pasta

    Drain the orecchiette in a colander and set aside.

Preparing Vegetables

    Prepare Broccoli Rabe

    While the pasta is cooking, rinse the broccoli rabe under cold water. Trim the ends and cut into bite-sized pieces.

    Sauté Garlic

    In a large skillet, heat 3 tablespoons of olive oil over medium heat. Add minced garlic cloves and sauté until fragrant, about 1-2 minutes.

    Cook Broccoli Rabe

    Add the prepared broccoli rabe and red pepper flakes to the skillet. Sauté for 3-4 minutes until the broccoli rabe is tender and bright green.

Combining Ingredients

    Combine Pasta and Vegetables

    Add the drained orecchiette to the skillet with the sautéed garlic and broccoli rabe. Toss to combine.

    Add Pasta Water

    Gradually add reserved pasta water, a little at a time, until the desired consistency is reached (should be slightly saucy).

    Season and Serve

    Stir in the Parmesan cheese and black pepper to taste. Toss everything together until well combined. Serve hot with extra Parmesan on top if desired.
