Prepare the Pasta

Cook the Spaghetti
Bring a large pot of salted water to a boil. Add gluten-free spaghetti and cook according to package instructions until al dente. Stir occasionally to prevent sticking.

Reserve Pasta Water
Before draining the spaghetti, reserve about 1 cup of the pasta cooking water. Drain the pasta and set it aside.
Prepare the Sauce

Mix the Sauce Ingredients
In a large mixing bowl, combine the nduja, eggs, grated pecorino cheese, grated Grana Padano cheese, and freshly ground black pepper. Whisk until well combined.
Combine and Serve

Combine Pasta and Sauce
In the same pot used for the spaghetti, add the drained pasta back in. Pour the nduja sauce over the pasta and quickly toss to combine, ensuring the pasta is coated with the sauce.

Adjust Consistency
If the sauce is too thick, add a little reserved pasta water, one tablespoon at a time, until the desired creamy consistency is reached.

Garnish and Serve
Serve immediately, garnished with chopped fresh parsley and extra grated cheese if desired. Enjoy your Nduja Carbonara!
