Method
Fritters
- 1
Prepare the Fritter Mixture
In a large mixing bowl, combine the lump crab meat, corn kernels, flour, crumbled feta cheese, chopped green onions, eggs, baking powder, paprika, salt, and black pepper. Gently mix until all ingredients are combined without breaking up the crab meat too much.
- 2
Heat the Oil
In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping a small amount of batter in; it should sizzle and float to the top.
- 3
Fry the Fritters
Using a tablespoon, drop spoonfuls of the fritter mixture into the hot oil. Fry for about 3-4 minutes on each side or until golden brown. Remove the fritters with a slotted spoon and set them on paper towels to drain excess oil.

Make the Jalapeño Aioli
In a small bowl, mix together the mayonnaise, finely chopped jalapeño, minced garlic, lime juice, and salt. Stir until well combined and refrigerate until ready to serve.
