Preparing the Grilled Salmon

    Marinate the Salmon

    In a bowl, combine olive oil, lemon juice, minced garlic, salt, black pepper, and chopped dill. Place the salmon fillets in the marinade and let them marinate in the refrigerator for at least 30 minutes.

    Preheat the Grill

    Preheat your grill to medium-high heat.

    Grill the Salmon

    Remove the salmon fillets from the marinade and place them on the grill. Grill for about 5-6 minutes on each side, or until the salmon is cooked through and has grill marks.

Preparing the Seasonal Vegetables

    Prepare the Vegetables

    In a bowl, combine the sliced zucchini, bell peppers, and asparagus. Drizzle with olive oil, and season with salt and black pepper. Toss to coat the vegetables evenly.

    Grill the Vegetables

    Place the seasoned vegetables on the grill and cook for about 8-10 minutes, turning occasionally, until they are tender and have grill marks.

Cooking the Rice

    Rinse the Rice

    Rinse the white rice under cold water until the water runs clear to remove excess starch.

    Cook the Rice

    In a pot, combine the rinsed rice, water, and salt. Bring to a boil, then reduce the heat to low, cover, and let simmer for about 18-20 minutes, or until the water is absorbed and the rice is tender.

Plating the Dish

    Serve

    On each plate, place a serving of rice, top it with grilled salmon, and arrange the grilled vegetables alongside. Garnish with additional dill if desired.
