Fig-Thyme Syrup Preparation

    Combine Ingredients

    In a medium saucepan, combine the chopped figs, thyme sprigs, sugar, and water.

    Cook the Mixture

    Place the saucepan over medium heat and bring the mixture to a boil. Stir occasionally until the sugar has completely dissolved.

    Simmer

    Once boiling, reduce the heat to low and let it simmer for about 20 minutes, or until the figs have softened and the syrup has thickened slightly.

    Strain Syrup

    Remove from heat and strain the syrup through a fine mesh sieve into a clean jar, pressing down on the figs to extract as much liquid as possible. Discard the solids.

    Cool the Syrup

    Let the syrup cool to room temperature before using. The syrup can be stored in the refrigerator for up to one week.

    Mix Ingredients

    In a glass, add 2 tablespoons of the prepared fig-thyme syrup and fresh lemon juice.

    Add Ice

    Fill the glass with ice cubes.

  3. 8

    Top with Soda

    Pour soda water over the ice and syrup mixture, stirring gently to combine.

    Garnish

    Garnish with a lemon wedge on the rim of the glass.
