Method

Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 425°F (220°C). Grease four ramekins with butter and dust with flour, tapping out any excess.

  2. 2

    Melt Chocolate and Butter

In a medium saucepan, melt the unsalted butter and semi-sweet chocolate together over low heat, stirring until smooth. Remove from heat and let cool slightly.

  3. 3

    Mix the Batter

Whisk in the powdered sugar until well combined. Add the eggs and egg yolks, one at a time, mixing well after each addition. Stir in the vanilla extract.

  4. 4

    Add Flour and Salt

Gently fold in the all-purpose flour and a pinch of salt until just combined. Do not overmix.

  5. 5

    Fill Ramekins

Divide the batter evenly among the prepared ramekins, filling each about 2/3 full.

Baking

  1. 6

    Bake the Cakes

Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes or until the edges are firm but the center is soft.

  2. 7

    Cool Slightly

Remove from the oven and let the cakes cool in the ramekins for 1 minute.

Serving

  1. 8

    Invert and Serve

Carefully run a knife around the edges of each ramekin, then invert onto serving plates. Serve immediately with a scoop of vanilla ice cream on top.
