Flatten the Chicken
Place each chicken breast between two pieces of plastic wrap and pound it to an even thickness of about 1/2 inch using a meat mallet or rolling pin.

Dredge the Chicken
Coat each piece of chicken in flour, shaking off any excess, then dip it into the beaten eggs, and finally coat it in breadcrumbs, pressing gently to adhere.

Fry the Chicken
In a large skillet, heat the olive oil over medium-high heat. Once hot, carefully add the breaded chicken pieces and fry for about 4-5 minutes on each side, or until golden brown and cooked through. Remove the chicken and place it on paper towels to drain excess oil.

Prepare the Salad
In a large bowl, combine the mixed greens, shaved pecorino cheese, and chopped toasted hazelnuts.

Dress the Salad
In a small bowl, whisk together the extra virgin olive oil and lemon juice. Drizzle the dressing over the salad and toss gently to combine.

Place the fried chicken on plates and top each piece generously with the dressed salad mixture. Add pickled ramps on top for extra flavor.
