Infuse the Gin
In a clean glass jar, combine the gin and fresh basil leaves. Seal the jar tightly and let the mixture infuse in a dark, cool place for 5 to 7 days, shaking it gently every couple of days. After the infusion period, strain the gin through a fine mesh sieve or cheesecloth to remove the basil leaves. Store the basil-infused gin in a clean bottle.

Make the Basil Syrup
In a medium saucepan, combine the granulated sugar and water. Bring the mixture to a boil over medium heat, stirring until the sugar is completely dissolved. Remove from heat and add the fresh basil leaves. Let the mixture steep for about 30 minutes. After steeping, strain the syrup through a fine sieve to remove the basil leaves. Allow it to cool before transferring it to a bottle for storage.

Assemble the Cocktail
In a cocktail shaker, combine 60 ml of the house-infused basil gin, 30 ml of basil syrup, and 30 ml of fresh lemon juice. Fill the shaker with ice and shake well until chilled. Strain the mixture into a champagne flute or coupe glass. Top it off with 120 ml of sparkling wine. Garnish with fresh basil leaves before serving.
