Method

Preparing the Potatoes

  1. 1

    Roasting the Potatoes

Preheat your oven to 425°F (220°C). Wash and cut the Kennebec potatoes into small wedges or cubes, about 1-inch in size.

  2. 2

    Seasoning the Potatoes

In a large bowl, toss the potato wedges with olive oil, salt, black pepper, and fresh rosemary until evenly coated.

  3. 3

    Roasting

Spread the seasoned potatoes on a baking sheet in a single layer. Roast in the preheated oven for 25-30 minutes, or until golden brown and crispy, flipping halfway through for even cooking.

Cooking the Eggs

  1. 4

    Cooking the Eggs

In a non-stick skillet, heat a small amount of oil or butter over medium heat. Crack the two eggs into the skillet and cook them to your desired level of doneness, either sunny-side up or over easy, about 3-4 minutes.

Cooking the Breakfast Meat

  1. 5

    Cooking the Bacon

In a separate skillet, cook the bacon slices over medium heat until crispy, about 5-7 minutes, flipping halfway through.

Plating

  1. 6

    Assemble the Plate

Once everything is cooked, plate the roasted potatoes, the cooked eggs, and bacon slices. Serve hot and enjoy your delicious breakfast!
