Roasting the Potatoes
Preheat your oven to 425°F (220°C). Wash and cut the Kennebec potatoes into small wedges or cubes, about 1-inch in size.

In a large bowl, toss the potato wedges with olive oil, salt, black pepper, and fresh rosemary until evenly coated.

Spread the seasoned potatoes on a baking sheet in a single layer. Roast in the preheated oven for 25-30 minutes, or until golden brown and crispy, flipping halfway through for even cooking.

In a non-stick skillet, heat a small amount of oil or butter over medium heat. Crack the two eggs into the skillet and cook them to your desired level of doneness, either sunny-side up or over easy, about 3-4 minutes.
