1. Prepare the Vegetables

Add the cubed sweet potatoes to the pot and stir well. Then, add the chopped collard greens and diced tomatoes. Season with salt, black pepper, and cayenne pepper. Stir to combine and cook for an additional 15-20 minutes until the sweet potatoes are tender and the greens are wilted.
6. Finish with Vinegar
Remove the pot from heat and stir in the apple cider vinegar for a touch of brightness. Taste and adjust seasoning if necessary.
