Field Peas Preparation

Cook Field Peas
In a small pot, add 1 cup of field peas and 1 tsp of salt. Cover with water and bring to a boil. Reduce heat and simmer for about 20 minutes, or until tender. Drain and set aside.
Matsutake Mushrooms Preparation

Sauté Matsutake Mushrooms
In a skillet over medium heat, add 1 tbs of olive oil. Once hot, add 2 minced garlic cloves and sauté until fragrant, about 1 minute. Add 200 g of sliced matsutake mushrooms and sauté for 5-7 minutes until they are tender and golden. Set aside.

Cook Tapioca Noodles
In a pot, bring 2 cups of water to a boil. Add 100 g of tapioca noodles and cook according to the package instructions, usually about 5-7 minutes until they are translucent. Drain and rinse under cold water to stop cooking.

Assemble the Dish
In a large bowl, layer the cooked field peas, sautéed matsutake mushrooms, and tat-soi greens. Add the cooked tapioca noodles on top. Finally, pour the mushroom dashi over the assembled ingredients and serve warm.
