Masala Chai Gelato

Prepare the Base
In a saucepan, combine whole milk, heavy cream, and sugar. Heat over medium heat until the sugar is dissolved and the mixture is steaming.

Infuse the Chai
Add the masala chai tea bags to the warm milk mixture and let steep for 15 minutes.

Chill and Churn
Remove from heat and strain to remove tea bags. Cool the mixture completely, then churn in an ice cream maker according to the manufacturer's instructions.
Spice Cake

Preheat Oven
Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.

Mix Dry Ingredients
In a bowl, whisk together the flour, baking powder, cinnamon, ginger, nutmeg, and salt.

Cream Butter and Sugar
In a separate large bowl, cream the unsalted butter and brown sugar until light and fluffy.

Add Eggs and Vanilla
Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

Combine Mixtures
Gradually add the dry ingredients to the wet mixture, mixing until just combined.

Pour the batter into the prepared cake pan and bake for 30-35 minutes or until a toothpick inserted comes out clean. Let cool before serving.
Salted Rum Caramel

In a saucepan, melt the granulated sugar over medium heat, stirring constantly until it turns a deep amber color.

Once the sugar is melted, carefully add the unsalted butter and stir until melted and combined.

Incorporate Cream and Salt
Slowly add the heavy cream while stirring continuously. Add salt and dark rum, stirring until smooth.

Remove from heat and let the caramel cool slightly before using.
Vanilla Chantilly

Whip the Cream
In a mixing bowl, combine heavy cream, powdered sugar, and vanilla extract.

Beat Until Stiff Peaks
Using a hand mixer or stand mixer, beat the mixture until stiff peaks form.

Transfer the chantilly cream to a piping bag or serve as is.
