Broth

Noodles and Toppings

Method

Broth Preparation

  1. 1

    Prepare the Bones

In a large pot, add the chicken or pork bones and cover them with water. Bring to a boil and let it simmer for 10 minutes. This helps to remove impurities.

  2. 2

    Make the Broth

After boiling, discard the water and rinse the bones. Return the bones to the pot, add 8 cups of fresh water, soy sauce, mirin, minced garlic, sliced ginger, and chopped green onions. Bring to a boil, then reduce heat to low and simmer for at least 3 hours.

  3. 3

    Strain the Broth

Once the broth has simmered, strain it through a fine mesh sieve into another pot, discarding solids. Keep the broth warm.

Noodle and Topping Preparation

  1. 4

    Cook Ramen Noodles

In a separate pot, boil water and cook the ramen noodles according to package instructions. Drain and set aside.

  2. 5

    Prepare Soft-Boiled Eggs

Bring a small pot of water to a boil. Carefully add the eggs and boil for 6-7 minutes. Remove them and place them in an ice bath to stop the cooking process. Once cooled, peel and set aside.

  3. 6

    Assemble the Ramen

In bowls, place a portion of cooked ramen noodles, ladle hot broth over the noodles, and arrange toppings including soft-boiled eggs, nori sheets, bamboo shoots, corn kernels, and sliced pork belly or chicken. Drizzle with chili oil and sprinkle with sesame seeds before serving.
