Method
Quail Roulade Preparation

Prepare the Quail
Remove the bones from the quail, leaving the skin intact. Season with salt and pepper.

Roll the Quail
Spread the foie gras mixture onto the quail, roll tightly, and secure with kitchen twine.
Roasted Apple Preparation

Prepare Apples
Preheat the oven to 180°C (350°F). Core and slice the apples.

Roast Apples
In a baking dish, combine apples, brown sugar, cinnamon, and butter. Roast for 30 minutes until tender.
Chestnut Polenta Preparation

Cook Polenta
In a pot, bring vegetable broth to a boil. Slowly whisk in polenta and cook until thickened, about 15 minutes.

Stir in chestnut purée and Parmesan cheese. Add butter and mix well.

In a small bowl, mix cocoa nibs with sugar. Set aside.

Spread the mixture on a baking sheet and bake at 180°C (350°F) for 15-20 minutes until golden.
Japanese Milk Bread Preparation

Make Dough
In a mixing bowl, combine flour, sugar, and salt. Dissolve yeast in warm milk, then add to the dry ingredients. Knead until smooth.

Cover and let the dough rise in a warm place until doubled in size, about 1 hour.
