Prepare the Batter
In a bowl, whisk together the brown sugar, honey, and egg whites until smooth. Gradually add the melted butter and mix well.

Mix Dry Ingredients
In another bowl, sift together the buckwheat flour, all-purpose flour, and salt. Gradually fold the dry ingredients into the wet mixture until just combined.

Incorporate Pears
Gently fold in the finely diced pears into the batter. Be careful not to overmix.

Bake
Grease a financier mold or mini loaf pans. Pour the batter into the molds and bake for 15-20 minutes or until golden brown and a toothpick comes out clean.

Charge the Crème Fraîche
In a whipped cream dispenser, fill it with the crème fraîche. Charge it with a nitrogen charger according to the manufacturer's instructions. Shake well and set aside.
Cotton Candy

Using a cotton candy machine, pour granulated sugar into the machine. If desired, add a drop of food coloring. Spin until the sugar forms into light, fluffy cotton candy.
