Method
Preparation
- 1
Soak the Ham
Start by soaking the whole country ham in water for 12 to 24 hours. This helps to draw out excess salt and makes the ham less salty when cooked.
- 2
Prepare the Spice Mix
In a bowl, mix together the brown sugar, black pepper, cloves, garlic powder, and mustard to create a spice rub for the ham.
Cooking
- 3
Preheat the Oven
Preheat your oven to 325°F (163°C).
- 4
Score the Ham
Remove the ham from the soaking water and pat it dry. Using a sharp knife, score the surface of the ham in a diamond pattern to allow the glaze to penetrate.
- 5
Apply the Spice Rub
Generously apply the spice rub all over the ham, making sure to get it into the scored cuts.
- 6
Bake the Ham
Place the ham on a roasting rack in a baking dish. Pour 2 cups of water into the bottom of the dish to create steam during cooking. Bake in the preheated oven for about 15-18 minutes per pound, or until the internal temperature reaches 145°F (63°C).
- 7
Prepare Optional Glaze
If using, combine honey and apple cider vinegar in a small saucepan over medium heat, stirring until the honey is dissolved. Brush this glaze over the ham during the last 30 minutes of cooking.
- 8
Rest and Serve
Once cooked, remove the ham from the oven and let it rest for at least 20 minutes before carving. This allows the juices to redistribute for a juicier ham.
