Preparing the Lamb

Preheat Oven
Preheat your oven to 200°C (400°F).

Prepare Herb Mixture
In a small bowl, combine chopped rosemary, thyme, minced garlic, olive oil, salt, and black pepper to create a herb paste.

Coat the Lamb
Rub the herb mixture all over the lamb rack, ensuring it is well coated.

Roast the Lamb
Place the lamb rack in a roasting pan and roast in the preheated oven for about 25-30 minutes for medium-rare, or until it reaches your desired doneness.

Rest the Lamb
Once done, remove the lamb from the oven and let it rest for 10 minutes before slicing.

Prepare the Vegetables
While the lamb is roasting, prepare the vegetables by washing and cutting them into slices or chunks.

Toss with Olive Oil
In a large bowl, toss the sliced carrots, zucchini, bell peppers, and red onion with olive oil, salt, and black pepper until evenly coated.

Roast the Vegetables
Spread the seasoned vegetables on a baking sheet and place them in the oven (alongside the lamb) for the last 20 minutes of roasting time, until they are tender and slightly caramelized.

Slice the rested lamb rack and serve alongside the roasted seasonal vegetables.
