Method

Preparation of the Beef

  1. 1

    Season the Wagyu

Take the Japanese Wagyu beef and pat it dry with paper towels. Season all sides generously with sea salt and freshly ground black pepper. Let it rest at room temperature for about 30 minutes to allow the flavors to penetrate.

  2. 2

    Prepare the Grill or Pan

Preheat your grill or cast-iron skillet over medium-high heat. If using a skillet, add a small amount of oil to prevent sticking.

Cooking the Beef

  1. 3

    Sear the Wagyu

Once the grill or pan is hot, place the seasoned Wagyu beef on it. Sear for about 2-3 minutes on each side for medium-rare, adjusting time based on your preferred doneness.

  2. 4

    Rest the Beef

After cooking, remove the Wagyu from the heat and let it rest for at least 10 minutes. This allows the juices to redistribute.

Preparing the Sauce

  1. 5

    Mix the Sauce Ingredients

In a small bowl, combine soy sauce, mirin, sake, and sesame oil. Whisk together until well blended.

Serving

  1. 6

    Slice and Serve

Slice the rested Wagyu beef against the grain into thin pieces. Arrange on a serving platter, drizzle with the sauce, and garnish with chopped green onions and sesame seeds. Serve immediately.
