Oysters Preparation

    Shuck the Oysters

    Carefully shuck the Harkers Island oysters, ensuring not to damage the meat. Set aside on a chilled plate.

    Ice the Oysters

    Place the shucked oysters on a bed of crushed ice to keep them fresh until serving.

Charleston Gold Rice Preparation

    Rinse the Rice

    Rinse the Charleston Gold rice under cold water until the water runs clear.

    Cook the Rice

    In a saucepan, combine rinsed rice, water, and salt. Bring to a boil, reduce heat to low, cover, and simmer for 20 minutes or until rice is tender.

    Fluff the Rice

    Once cooked, remove from heat and let it sit covered for 5 minutes. Fluff with a fork before serving.

Genmai (Brown Rice) Preparation

    Rinse the Genmai

    Rinse the Genmai (brown rice) under cold water until the water runs clear.

    Cook the Genmai

    In a separate saucepan, combine rinsed Genmai, water, and salt. Bring to a boil, reduce heat to low, cover, and simmer for 50 minutes or until rice is tender.

    Rest the Genmai

    Remove the saucepan from heat and let it sit covered for 10 minutes before fluffing with a fork.

Champagne Sabayon Preparation

    Prepare the Sabayon

    In a heatproof bowl, whisk together the egg yolks, sugar, and a pinch of salt. Gradually add the champagne while whisking continuously.

    Cook the Sabayon

    Place the bowl over a pot of simmering water (double boiler). Continue whisking until the mixture thickens and doubles in volume, about 8-10 minutes.

    Cool the Sabayon

    Remove from heat and allow to cool slightly before serving.
