Method

Dough Preparation

  1. 1

    Mix Dry Ingredients

In a large bowl, combine all-purpose flour, baking powder, sugar, and salt. Whisk together until well blended.

  2. 2

    Add Wet Ingredients

Make a well in the center of the dry ingredients and pour in warm water and vegetable oil. Mix with a spatula or your hands until a dough forms.

  3. 3

    Knead the Dough

Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth and elastic.

  4. 4

    Rest the Dough

Cover the dough with a damp cloth and let it rest for at least 30 minutes.

Duck Filling Preparation

  1. 5

    Prepare Duck Breast

Score the skin of the duck breasts in a crisscross pattern. Season with salt and five-spice powder.

  2. 6

    Cook Duck

In a skillet over medium heat, place the duck breasts skin-side down. Cook for about 6-8 minutes until the skin is crispy. Flip and cook for another 4-5 minutes until medium rare. Remove from heat and let rest.

  3. 7

    Shred Duck Meat

Once rested, shred the duck meat into bite-sized pieces.

  4. 8

    Mix Duck with Sauces

In a bowl, combine shredded duck, soy sauce, and hoisin sauce. Mix well to combine.

Assemble and Steam Buns

  1. 9

    Roll Out Dough

Divide the rested dough into small balls (about the size of a golf ball). Roll each ball into a circle about 4 inches in diameter.

  2. 10

    Fill the Buns

Place a spoonful of the duck filling in the center of each dough circle. Add a few pieces of sliced green onions and a slice of cucumber on top.

  3. 11

    Seal the Buns

Fold the dough over the filling and pinch the edges to seal tightly.

  4. 12

    Steam the Buns

Place the buns in a steamer basket lined with parchment paper. Steam over boiling water for about 10-12 minutes until fluffy.

Serve

  1. 13

    Garnish and Enjoy

Once steamed, remove the buns and garnish with cilantro leaves and sesame seeds. Serve warm.
